Difference Between Cacao & Cocoa Powder

Indic Organics cacao powder and Normal cocoa powder are derived from the same source, which is the cacao bean. However, there are some differences between the two in terms of processing and nutritional composition.

Cocoa powder: Cocoa powder is produced by grinding roasted cacao beans and removing the cocoa butter. The remaining solids are then ground into a fine powder. Cocoa powder is typically processed at high temperatures and undergoes additional alkalization, which gives it a milder flavor but also reduces its nutritional value. This process is known as Dutch processing. Cocoa powder is commonly used in baking, desserts, and hot chocolate mixes.

Indic Organics cacao powder: Cacao powder is made by Slow roasted cacao beans which are fermented. This process helps retain more of the natural nutrients and antioxidants found in the cacao beans. Indic Organics Cacao powder is not alkalized, which preserves its natural acidity and intense flavor. It is often considered a more "raw" and less processed form of cacao. In this process Indic Organics Cacao Powder also retains almost 10-12% Cacao Fat which makes any drink or dish made very rich, creamy and indulgent.

pH Value of Indic Organics Cacao Powder is approx 5.6.

Nutritional differences: Cacao powder, including Indic Organics cacao powder, is generally considered to be more nutritious compared to cocoa powder. The cold-pressing and minimal processing of cacao powder help retain higher levels of antioxidants, minerals (such as magnesium and iron), and other beneficial compounds. Cocoa powder, on the other hand, may have lower levels of some nutrients due to the processing methods involved.

Flavor differences: Cacao powder tends to have a stronger and more complex flavor profile compared to cocoa powder, which is milder. The natural acidity of cacao powder can provide a slightly fruity or bitter taste, while cocoa powder often has a smoother, more chocolaty flavor.

Ultimately, the choice between Indic Organics cacao powder and cocoa powder depends on personal preference and specific culinary needs. If you prefer a more intense flavor and higher nutritional content, cacao powder may be the preferred option. If you prefer a milder flavor or require cocoa powder for a specific recipe, then cocoa powder would be more suitable.
